Chocolate Crackles
Oct. 6th, 2012 04:16 pmDairy free cookies (though they do contain egg so aren't actually Mum-friendly)
Recipe makes about 4 dozen.
1 cup cocoa
2 cups sugar (granulated)
1/2 cup vegetable oil
4 large eggs
2 tsp vanilla
2 cups AP flour
2 tsp baking powder
1/2 tsp salt
1 cup icing sugar (to roll the cookies in)
whisk together flour, baking powder and salt
beat together oil, cocoa, sugar and add eggs 1 at a time
add vanilla
add flour mix
chill for 4 hours or freeze for 15 minutes.
heat oven to 350f/gas mark 4
roll rounded teaspoons of chilled dough into a ball, then roll the ball in icing sugar to coat
bake 10-12 minutes
cool on baking sheet 2 mins then remove to rack.
I didn't make any of these cookies today, but I did find the recipe while I was trying to locate copies of our Sky and Virgin Media bills (our modem is on the blink) thought I'd write it down here so that I can chuck out the very mucky piece of scrap I'd written the recipe on. They're very delicious cookies!
