Chicken Stir Fry Dinner of Awesome

1 large onion, chopped
3 cubes each ginger, garlic and chili *
1 tsp garam massala/curry powder
chopped tomatoes - about 3 medium-large
water
1 tablespoon garlic and chili hot sauce
1 tablespoon soy sauce
350g chicken cubed
1 pack stir fry veg **
1 pkg amoy fine ready to wok noodles/noodles enough for 2
*1 cube = 1 clove of garlic, or 1 tsp of ginger/chili
** I used the mushroom stir fry from Tesco, cause it's pepper-free and I love mushrooms!
Cook the onions til soft, add the ginger, garlic and chili, garam massala and cook for a minute.
Add the chopped tomatoes and cook them until they're soft, add the hot sauce and soy sauce, and then the cubed chicken. Add some water if necessary and let it simmer until the chicken is cooked through.
Add the stir fry mix, and cook to instruction - a minute before the veg should be cooked add in the noodles (pre-boiling them if necessary).
I'm a freezer addict so the chopped onions, garlic, ginger, chili and the chopped tomatoes all came from the freezer. I cannot recommend buying these ingredients frozen highly enough; you can use every bit of the product, no waste from onions that look good outside and are rotten inside, no waste from peeling or only needing a little bit, it keeps for as long as you need and because it's all ready prepared you don't have to spend time chopping or peeling, you just get on with cooking!
